The dark-capped mushroom that built the modern speciality mushroom market. Cultivated in East Asia for a thousand years, now grown worldwide on hardwood sawdust.

Known for

Contains lentinan and eritadenine, and develops meaningful vitamin D when exposed to ultraviolet light. Deep umami makes it the most commercially established of the premium culinary species.
